Abstract:

To consume ice and cold drinks is a civil practice that dates back to ancient times in Iran. In the cold regions where climatic conditions allow the accumulation of snow and ice in the mountain peaks, the natural ice reserves have been used freely. But in many arid regions in Iran, there are artificial ice reserves to keep ice which are called Yakhchal (in Persian, a hole filled with ice). This ice hole is an Iranian design. The Yakhchal is designed in such a way as to store ice kept in freezing condition to last up to the end of summer. These Yakhchal were privately owned and brought large income for their owners. Usually, the customers were living well mostly in the cities. This explains the existence of the Yakhchal around the cities. The numbers of the Yakhchal reflect the significance of the old cities where the rich people chose to stay more than any other social class.
