چکیده مقاله:

The aim of this study was to seek appropriate transport method of fresh rainbow trout using different ice types. A total of 50 fish were divided into five treatments as follow. A group of fish was transported without ice served as control. Fish were transported using lumps (blocks) of ice in the basket, crushed ice in insulated tank (CSW), flake ice and mixture of water and ice in insulated tank during 4 h, respectively. Following transport, the samples were taken on days 0, 6, 10, 14 and 15 to determine peroxide values and sensory index. The changes in the fish were investigated by sensory assessments, chemical analyses and microbiological analyses. Peroxide amount was increased over time during transport, so that the rate of increase was higher in control group (9.5±0.20 meq). Whereas, peroxide amount was significantly lower (4±0.12 meq) in the last treatment. Sensory index was improved in Flaked ice and mixture of water and ice in insulated tank, respectively. According to the present results, water and ice mixture in insulated tank is highly recommended during rainbow transport due to prevention against spoilage.
