چکیده مقاله:

Background and Aim:The spread of microbial contaminants and the effects of their toxins is one of the problems facing humanity, which has tried to control some of these toxins in the fungal area by natural compounds. Methods:The antifungal activity of the carvacrol and p-cymene were studied with regard to the inhibition of the growth of Aspergillus flavus PICC-AF39, Aspergillus flavus PICC-AF24. The minimal inhibitory (MIC) and minimal fungicidal (MFC) concentrations of the mentioned compounds were determined. Sub-MIC was selected for the measurement of aflatoxins B concentration. Results:The results indicated powerful antifungal properties of both compouneds inhibiting growth and aflatoxin production that could be applied to food as preservatives. A significant reduction in aflatoxin production was demonstrated by carvacrol. Conclusion:The carvacrol and p-cymene could be safely used as preservatives in pharmaceuticals as well as health and food products to protect them against toxigenic fungal infections.
