In this paper we have studied the effect of enzymatic pretreatment on the extraction of soybean oil. Enzyme dose, absolute moisture and hydrolysis time have been selected as the experimental parameters. The experiments were conducted by means of the factorial method. The experimentalresults showed that the enzymatic pretreatment improved the soybean extraction up to a figure of 7.2 percentages. It was also deducted that enzyme dose and moisture content have a significant influence on the pretreatment and improvement of soybean extraction
