Lipase immobilized by adsorption on modified sepiolite was used to hydrolyze different oils, namely olive oils. The hydrolysis reaction was carried out at a temperature of 60◦C. It was experimentally proven that adsorption of lipase increased with temperature and was higher on hydrophobic membranes than hydrophilic ones. The effluent concentrations of fatty acid products were measured using gas chromatograph with FID detector. The enzyme activity of free and immobilized enzyme in the hydrolysis of olive oil was tested at different pH and pH=6 showed the highest activity for immobilized enzyme. Synthesis of hydrolysis was efficiently catalyzed by the covalently immobilized lipase yield up to 59 % after 4 h of reaction time.
