Bioactive peptides are protein derivatives that their activity is based on the composition and sequence of amino acids. The simplest peptides have been formed of 2 amino acids, but bioactive peptides usually have 3 to 20 amino acids in their structure. Seperation of bioactive peptides is performed by the chemical methods including acid and alkaline hydrolysis, laboratory-scale enzymatic hydrolysis and Recombinant DNA technology. Liquid chromatography, gel filtration, ultrafiltration, and ion-exchange separation technologies are among the most up-to-date methods in separating bioactive peptides. Bioactive peptides are seperated and produced from different sources, like animal sources such as eggs and milk and plant sources such as soy. Marine proteins have been much considred as a very good source of bioactive peptides. Various activities such as anti-cancer, anti-hypertension, anti-heart disease, anti-microbial, anti-diabetic (type 2) and immunomodulatory activities have been observed from these peptides. Antioxidant properties are one of the biological properties of bioactive peptides that have attracted much attention. This property has shown its impact both in the food containing these peptides and the chemical reactions in the body. Conducting studies and testing of different aspects of these peptides can lead to the production of commercial products based on these peptides and their practical application in the food and pharmaceutical industry according to the beneficial properties of these peptides.
