In this research, a fast, accurate and non-destructive method is proposed for grading the potato based on its internal properties. For this purpose, potato feedback with surface, (iron, wood and marble slab) were used to determine the hollow heart of potatoes. Potatoes were purchased with a variety banba and their size, weight, and density characteristics were measured. Acoustic emission system consisted of a sound level meter (Model HT157 - Made in Italy), a laptop, different surfaces and cool edit software for on-line recording signals, Results showed the type of collision surface is directly related to the prevailing frequency of potatoes so that each of the surfaces selected for this test has different frequency values. Therefore, it is not a suitable characteristic for consideration as a diagnostic factor in this study It was determined that the surface of the Iron collision and the height of 30 cm potato release had the highest ability to detect the hollow heart of potatoes. Results showed the surface of wood and marble slab, due to the absorption of sound caused by potato clash, reduce the amplitude of the audio signal and reduce the power of detection. By processing the received sound signals, it was found that at 802.7 Hz, the Amplitude Pressure for potatoes with a hollow heart is higher than that of a potato without a hollow heart. Therefore, the detection criterion is the frequency 802.7 Hz for separation
