THE ASSOCIATION OF THE HEALTHY EATING INDEX AND ITS RELATIONSHIP WITH TRACE ELEMENTS

Background and Aim: Quality of life is affected by healthy behaviors, such as a healthy diet, and plays a major role in the prevention of chronic disease. Dietary indices such as the Healthy Eating Index and Alternative Healthy Eating Index (HEI/AHEI) are used to evaluate the dietary quality. In the current study, we aimed to investigate the impact of dietary quality, assessed using the HEI, on the inflammation and induced oxidative stress status. Methods: A cross sectional study was designed based on data from the Mashhad stroke and heart atherosclerotic disorders (MASHAD: 2010-2020). A total of 8996 participants (3289 males and 4707 females) aged 33-71 years, were recruited from three regions in Mashhad city, which is located in the northeast of Iran, to investigate the individual correlations between serum copper and zinc with the HEI/AHEI values.Results: There was a positive correlation between HEI/AHEI values with serum zinc (Zn) concentration (r score:0.04 & p<0.001), and, a negative relationship between serum copper (Cu) concentration (r score: -0.06 & p<0.001) with HEI/AHEI. We found significant association between level of serum cu and HEI in subjects with level of cu 70> (male)/80> (female), that they had a higher level of HEI(OR=1.01(95%CI=1.00-1.02), p=0.01) in compared to subjects with level of cu 70-140 (male)/ 80-155(female). Additionally, we showed significant association between level of serum cu <140(male)/155(female), and AHEI (OR=0.98(0.97-0.99), p=0.01). Conclusion: According to the results, we conclude that HEI/AHEI indices are the zinc-rich high-quality diets that lead to decrease of serum copper values
