STUDY OF THE SOME REQUIREMENTS FOR ORGANIC FOODS AND PRODUCTS BASED ON THE HAZARDS AND HEAVY METALS

Ardabil province has a large potential to be one of the suppliers of healthy foods, vegetables, and other foodstuffs such as meat, milk and other dairy products. Recently, different reports are presented related to high amounts of heavy metals, chemical compounds such as nitrite and nitrate, toxins, antibiotics and other hazards. These reports reduce the local and global markets of the Ardabil farmers and producers. To keep this opportunity, different approaches are available. One of the recent approaches in food science and technology is related to organic raw materials, foods, and products. It is clear that to have an organic product, it is necessary to have organic raw materials, as well as, allowed additives and ingredients. In the gardens and farms of organic foods, all of synthetic fertilizers and pesticides are not allowed. Also, using genetically modified organisms and products produced by them are generally forbidden. Good manufacturing practice (GMP) must be set in the farms and factories. In this paper, some aspects of organic foods and products are described and some sources of hazards including chemical, physical and microbial are presented. Some requirements in the quality control laboratory are mentioned to determine some of these threats, for example, heavy metals and toxins which guarantee the organic evidence.
