چکیده مقاله:

Phytophenols are known to play pivotal roles towards human physiology. They are considered as the food nanocomponents with efficient antioxidant properties towards the most frequent human disorders, e.g., cardiovascular diseases, cancer and neurodegenerative risks. However, the side effects of plant polyphenols in the body circulation and nervous systems are not well established. Thus, determinations of the binding process of curcumin as a common flavonoids produced by some plants are essential. The interaction between curcumin and tau protein as a model of nervous system protein, was examined by UV-visible spectroscopy. It was revealed that curcumin binds to the tau protein and form a stable complex. This formed complex has a nano dimension and may alter the tertiary structure of tau protein. Therefore, it may be suggested that high concentration of curcumin can show some deleterious side effects on the bio-macromolecular structures
