خلاصه مقاله:
Chemometrics closely connected with statistics and mathematics. It has an important role in analytical chemistry. For handling analytical results different chemometric methods are employed. The objectives of chemometrics in analytical chemistry are focused on characterization and chemo metrical classification of different samples. Food samples can also be characterized by chemo metrical methods. Chemometrics can be used for fast and efficient determination of food sample categories, such as edible oils, wines, fruits and fruit juices etc. Classification can also be performed according to the origin, source or season. Thus, this article provides description, classification, and comparison of the most important statisticaltechniques that are commonly employed in food authentication and traceability, provide a general overview to non-expert readers in the use of chemometrics in food science. Finally, it is determined that chemometrics has become a powerful ally in facilitating the detection of frauds and ensuring the authenticity and traceability of foods.
