SPME-GC-MS ANALYSIS OF VOLATILE COMPUNDS IN HONEY FROM IRAN: A METHOD FOR THE DETERMINATION OF THE BOTANICAL ORIGIN OF HONEY HERE

VOLatile compounds in honey samples of different botanical origins were investigated honey samples obtained from hive sites in different regions of iran were analyzed the samples had four different botanical origins citrus thyme acacia and lavender identification of volatile compounds was carried out by SPME/GC/MS analysis the chemical composition of the headspace was very diverse owing to the presence of compounds from different chemical classes for instance alcohols phenols ketones organic acids esters and hydrocarbons aliphatic ,aromatic and cyclic.
